GAZPACHO
Ingredients:
- 6 Vine Ripe Tomatoes, peeled and chopped,
- Tomato Juice, to blend,
- 1 Medium Red Onion,
- 1 Cucumber, peeled, quartered,
- 1/2 Red Bell Pepper,
- Pinch of Salt,
- 4 tsp Freshly Grated Lemon
- 2 tsp Lemon Juice, and/or Orange Juice,
- 1 medium garlic clove, minced,
- 2 tablespoons fresh basil leaves,
Directions:
- Blend ingredients, while gradually adding tomato juice to achieve the fluidity you are aiming for, until pureed, and transfer into a pitcher. Let chill for an hour in a refrigerator.
- Serve, with or without croutons.
