GAZPACHO





Ingredients:

  • 6 Vine Ripe Tomatoes, peeled and chopped,
  • Tomato Juice, to blend,
  • 1 Medium Red Onion,
  • 1 Cucumber, peeled, quartered,
  • 1/2 Red Bell Pepper,
  • Pinch of Salt,
  • 4 tsp Freshly Grated Lemon
  • 2 tsp Lemon Juice, and/or Orange Juice,
  • 1 medium garlic clove, minced,
  • 2 tablespoons fresh basil leaves,


Directions:

  1. Blend ingredients, while gradually adding tomato juice to achieve the fluidity you are aiming for, until pureed, and transfer into a pitcher.  Let chill for an hour in a refrigerator.
  2. Serve, with or without croutons.
