FIG JAM
Ingredients:
- 1 1/3 lb. Figs, stems removed, cubed,
- 1 cup Splenda,
- 1/4 cup lemon juice,
- 1/3 cup water,
- 1 teaspoon lemon extract (optional),
Directions:
- Toss figs and Splenda together, in a neutralized bowl, and let stand for 10 to 15 minutes; until the Splenda is almost dissolved by the figs and juice of figs .
- Add lemon juice, lemon extract (optional), and the water, and bring it to a boil.
- Simmer until the fruit is soft, and the thickened juice is dripping from the fruit, and that means the mixture must simmer for approximately 20 minutes.
- Store the fig mixture, while leaving a little space at the top of the jar, in a sanitized one pint container mason jar or other glass jar meant for jam and/or preserves. Let cool to a room temperature, and refrigerate for a time period of up to two months.
