FRENCH ONION SOUP


Ingredients:

  • 2 lbs chopped yellow onions for a contemporary taste, or red onions,
  • 1/2 cup chopped red onions,
  • 5 cups beef broth for a traditional meat dish, or vegetable stock for a parve dish,
  • 1 teaspoon GOYA chicken bouillon granules, or other chicken bouillon granules,
  • Pinch of white pepper,
  • 3 to 4 springs of dill or thyme,
  • 2 Bay leaves,
  • Vegan Swiss Cheese,
  • 1/4 cup grated vegan parmesan cheese,
  • 1 tablespoon finely minced dill for garnish (optional),

Directions:

  1. Remove and discard outer skins and outer roots, and chop onions.  Place onions in a 2- quart pot, and add: beef stock, onion, bouillon granules, and pepper.  Bring to a boil over high heat. Reduce to Medium-Liw, and cook for approximately 10 to 12 minutes.
  2.  Add the vegan or kosher parmesan cheese (optional).
  3. Turn up the heat, and let cook over medium heat, whilst stirring occasionally for 15 to 20 minutes.
  4. Preheat oven to 350 degrees Fahrenheit.  Fill the bowls with soup.  Top each soup with french bread (optional), and then vegan Swiss cheese.  Bake in the oven for twenty minutes, while switching to boil during the last couple of minutes to give the cheese a golden brown hue
