ROASTED CHICKEN
Ingredients:
- 1 Whole Kosher Chicken for roasting, or 1 Whole Chicken to be gutted and cleaned according to directions, approx. 4-5 lbs,
- Kosher salt,
- Pepper,
- Vegetable oil cooking spray, or light vegetable oil substitute,
- Cavity Filling: 1 lemon halved, 1/2 head of garlic, 1 bunch of thyme, and enough celery to fell the cavity.
Directions:
1. Preheat the oven to 425 degrees Fahrenheit.
2. Gut (for example, remove the giblets) and clean the chicken if needed, to be sure that the chicken is kept kosher as needed for roasting recipe. Be sure that it is completely free of pin feathers.
3. Stuff the cavity with the filling displayed above.
4. Lightly pump cooking spray onto the chicken, and rub it with salt and pepper to taste.
5. Roast for 70 minutes to 1 1/2 hours.
6. Let cool for 20 minutes, slice, and serve with vegetables as a garnish. This sliced dish looks good on a platter.
