ONION PANCAKES (AKA: AMERICANIZED KOREAN PAJEON PANCAKES)
Ingredients
- 1 1/4 cup flour,
- 1 cup milk,
- 2 tablespoons paleo sugar,
- 1 cup fresh green onions ( 8 or 9 stalks of Chopped scallions),
- 1/4 teaspoon salt,
- 1/2 teaspoon baking soda
- 2 tablespoon vinegar,
- 1 egg,
- 1 to 2 tablespoon cooking spray,
Directions
- Mix the milk and vinegar and let it stand for a couple of minutes.
- Mix the dry ingredients together in a large bowl.
- Thoroughly mix the egg milk and cooking spray together. Whisk the wet ingredients into the dry ingredients.
- Heat a nonstick frying pan or lightly oiled with cooking spray skillet over medium-high heat.
- Scoop the batter onto the skillet , using 1/4 cup for each pancake, whilst spreading it flat to ensue it is cooked, cook until bubbles appear on the surface of the cooking batter, then flip and cook until golden brown on both sides.
- Serve with syrup (sugar free syrup is available as a healthy alternative or use a preceding sugar free syrup recipe in this blog), or serve plain. Yields approximately 12 pancakes.
