BUTTERMILK BISCUITS
Ingredients:
- 2 cups unbleached white flour,
- 1/2 teaspoon salt,
- 4 teaspoons baking powder,
- 1/2 teaspoon baking soda,
- 6 tablespoons applesauce or 3 tablespoons Greek yogurt,
- 1/4 cup buttermilk,
Directions:
- Preheat the oven to 450 degrees Fahrenheit.
- Sift all of the dry ingredients into a large bowl.
- Now focus on what you will do with the wet ingredients. Mix the applesauce with the buttermilk in a medium bowl.
- Quickly, yet gently, stir the wet ingredients into the dry ingredients, just until the dough holds together. Do not over stir to the point in which the dough is tough.
- Lightly flour a board, place dough on the board, and knead the dough with lightly floured hands.
- Option 1: Roll out dough to 1/2 inch thickness. Option 2: For a layered taste, press dough into. sphere, cut in half, place one half on top of the other, and press down. Repeat three times. Then roll the dough out to 1/2 inch thickness.
- Cut biscuit rounds into the dough with a biscuit cutter and/or an upside down glass.
- Place the biscuits on nonstick baking sheet or a ungreased baking sheet with biscuits nearly touching or while leaving little space between each biscuit.
- Bake for 15 to 18 minutes or until the biscuits are golden brown. Serve whilst warm with preserves or butter or ghee or jelly or plain.
