SMOTHERED DUCK STIR-FRY
Ingredients:
- 1 to 1.5 lbs duck breasts, chopped into 1-inch cubes,
- GOYA adobo seasoning, or homemade creole seasoning,
- Vegetable oil cooking spray,
- 1 cup flour,
- 6 to 8 cups chicken broth or duck broth,
- 1 celery stalk, finely chopped,
- 1 onion, finely chopped,
- 1/2 red bell pepper, cored and finely chopped,
- 1/2 yellow bell pepper, cored and finely chopped,
- 1 bunch thyme, chopped,
- 2 to 3 cloves of garlic, minced,
- Cooked rice,
Directions:
- Season, thoroughly coat, the duck with creole or adobo seasoning.
- Spray wok with vegetable oil cooking spray, and place on medium heat setting.
- Brown the duck on all sides. Be sure to thouoghly cook it. Remove duck from the wok, and set aside.
- Add broth and gradually stir in the flour to create a gravy. Add vegetables to the wok, and saute them in the sauce for 5 to 8 minutes.
- Stir in the rice and cook for an additional 5 minutes.
- Garnish with sprinkled thyme leaves as garnish (optional).
- Serve.
*Yields 4 to 6 servings
