SMOTHERED DUCK STIR-FRY



Ingredients:

  • 1 to 1.5 lbs duck breasts, chopped into 1-inch cubes,
  • GOYA adobo seasoning, or homemade creole seasoning,
  • Vegetable oil cooking spray,
  • 1 cup flour,
  • 6 to 8 cups chicken broth or duck broth,
  • 1 celery stalk, finely chopped,
  • 1 onion, finely chopped,
  • 1/2 red bell pepper, cored and finely chopped,
  • 1/2 yellow bell pepper, cored and finely chopped,
  • 1 bunch thyme, chopped,
  • 2 to 3 cloves of garlic, minced,
  • Cooked rice,

Directions:

  1. Season, thoroughly coat, the duck with creole or adobo seasoning.
  2. Spray wok with vegetable oil cooking spray, and place on medium heat setting.
  3. Brown the duck on all sides. Be sure to thouoghly cook it. Remove duck from the wok, and set aside.
  4. Add broth and gradually stir in the flour to create a gravy.  Add vegetables to the wok, and saute them in the sauce for 5 to 8 minutes. 
  5. Stir in the rice and cook for an additional 5 minutes. 
  6. Garnish with sprinkled thyme leaves as garnish (optional).
  7. Serve.
*Yields 4 to 6 servings
