BROCCOLI & CHEESE CASSEROLE



Ingredients:

  • 9.5 oz Kosher Wasa Crackers, Matzo Cracker, or other kosher certified cracker,
  • 3 pounds Broccoli, cut into florets, or use frozen pre-cut broccoli florets,
  • 2 lb Kosher Shredded Cheddar Cheese,
  • 3/4 cup Milk [Lactaid is creamy and works well],
  • Cooking Spray and/or Vegetable Oil,
  • Salt and/or black pepper to taste,
  • Cayenne pepper,

Directions

  1. Preheat oven to 350 degrees Fahrenheit. Place crackers in a large Zip-lock bag and slightly crush whilst leaving chunks, and set aside.
  2. Spray a 13x9 inch casserole dish with cooking spray or lightly oil with vegetable oil of your choice.
  3. Submerge the broccoli in boiling water and cook for a couple of minutes. Strain and set aside.
  4. Through the shredded cheese in a large pot with the milk, cayenne pepper, and salt.  Gentle melt cheese in milk over low heat whilst stirring occasionally, and mix into a creamy cheese sauce.  Add broccoli to the cheese sauce and half of the cracker mix or add a little more cracker mix for a chunkier mix; and stir to combine.
  5. Sprinkle the remaining cracker mix as a topping on top of the broccoli mixture, or mix remaining crumb mixture with vegatble cooko
  6. Bake for approximately 20 minutes; until the top is golden brown.
