POACHED WHITING
Ingredients:
- 3 pounds of whiting, gutted and cleaned,
- 1 teaspoon sea salt,
- 2 quarts water,
- 1/4 teaspoon fresh cracked pepper,
- 1/4 cup sesame oil,
- Juice of 1 fresh lemon,
- 1 onion (optional),
- 1 celery stalk (optional),
- 1 teaspoon parsley (optional),
Directions:
- Place salt, onion and celery if using, in water and bring to a boil. Add fish and boil for 15 minutes.
- Drain fish and remove the skin and bones.
- Place in a serving dish, top with pepper, sesame oil, lemon juice, and parsley if using, and serve at desired temperature.
