BLACK BEAN BURRITOS



Ingredients:

  • 1.5 cups salsa, plus additional salsa as desired,
  • 1 teaspoon chili powder
  • 3 cups cooked jasmine and/or basmati rice, or white rice,
  • 1 can black beans, 15 oz,
  • 1 can whole kernel corn with red and green peppers, 11 oz, undrained,
  • 1.5 cups shredded vegan cheese, 6oz,
  • 8 flour tortillas, 8 inches in diameter,


Directions:

1. Heat salsa and chilli powder to boiling in a 10 inch skillet.  Stir in rice, remove from heat, to briefly let cool. Hence, cover and let stand for approximately 5 minutes.

2. Spoon roughly 1/2 cup of rice and bean mixture onto the center of each tortilla.  Fold up bottom of each tortilla, fold over sides, and secure with an inserted toothpick. Serve with additional salsa as desired.

Serves 4 people.
